S2 will be moved to new server today around 11 PM of server time. We need to do this to reduce lags on S1 and S3, but S2 will also benefit from being on different dedicated server.

The server will be down for 5-10 minutes after 11 PM until the data are moved. The server should be back online shortly, as soon as the data are transferred.

S3 too Or just S1?
IwAn: S3 and S1 will remain untouched, s2 will be down for 5-10mins until its fully moved on a new server (With new IP).

As mentioned, it is not being moved to improve the performance of s2 itself but to reduce the load of s1 and s3 so they wont be lagging because of s2.
But since it will be on a separate server, it might be little bit smoother.
